Denver Botanic Gardens

Last Friday was “free day” at the Botanic Gardens.  Although we didn’t know it, we were pleasantly surprised to find this out.  The Gardens are beautiful!  You really get the sense, walking around that you are witness to some amazing artisans work.  The craft, love,care and expertise behind these beautiful gardens must be incredible! It was a beautiful sunny day and Eli and I had a blast walking around and  taking pictures,seeing how everything was built (Eli) and just generally absorbing the happy scene.  Yeah for Denver’s Botanic Gardens!!

Celebration

One of the major things I thought about during our Cleanse was how deprived I felt and how much I wanted chocolate.  It didn’t help that I was listening to a book called; Candy Freak, at work; about a fellow who is obsessed with chocolate candy bars. His book explores the history of chocolate (quite fascinating). Throughout the book the main character (its a memoir  is biting into delicious chocolate bars that, the passionate chocolatier, who is in charge of that particular factory, is excitedly showing him.  Some have hazelnuts, some have almonds some have wafers…..oh my.  Needles to say, I was Craving chocolate and wanted it almost desperately.  I kept thinking of Willie Wonka’s chocolate river. And the way that Charlie undid the wrapper of his chocolate bar, looking for the last  golden ticket.  If only I could jump in a chocolate river….and unwrap a big candy bar, only to take a huge bite and then another and another……

So the day after we’d finished, I made a dark chocolate cake with dark chocolate icing.  Check it out!  I must say, it turned out quite well.  It will be enjoyed with coffee ice-cream 🙂

CLEAN

So it is officially Spring and that means a time of change,cleaning, flowering open, getting ready for Summer….which is a whole different lifestyle.  No more hunkering over good books and hot cocoa and hot crock pot meals, break out the bikini, the flip flops the hat and get ready for sun and adventure and baseball and flowers and flowing water and green trees.  So to bring in the Spring season, Eli and I decided to do a three week cleanse.  Wow. Let me just say, three weeks has never gone by so slow! And….I’m not sure if I could have done it without Eli.

For the cleanse we had liquid breakfast (see blueberry,almond milk chocolate smoothie, surprisingly delicious) very healthy lunch and then liquid dinner, which at first were zuccini and butternut soups brought to work in our water bottles, until we were too grossed out to include dinner in our repitoire.  So the mornings consisted of a trip to the sunny whole Foods in our neighborhood.  While the world around us woke to baked muffins with blueberries and rich espresso drinks (at least this is what I imagined)  Eli and I were foraging the store for vegetables and asking lots of questions “what is a jicama?” “Whats the difference between shallots and green onions”, “Where do we find brown rice sweetner?”  “Where can we find a gluten free Tamari sauce?”  “Do you have coconut oil?” “Why is it solid? “……..ect. We leaped into the world of food and learned all about it.  And I must say, I am very glad I have NO special dietary needs (like, no dairy, or gluten) its practically a full time job. [Read more →]

A Morning Hike

Celebrating….Springtime!  And that we can 🙂  We have to work at 3pm everyday, so we try to make the most of our days and then arrive to our cubicles exhausted….ready to sit for 7 hours.  This is SO hard for me!

First Moto trip of the year!

We stopped for a break at the confluence of the N.Platte and the S. Platte.  It was a gorgeous day and everyone was out enjoying the weather.  I was SOO happy to be out.  My bike felt great, which surprised me since I hadn’t really ridden it all winter.  Our new KLR was awesome!  Eli rode it most the day (though I don’t think he was as happy about it as I was)

Before our trip out, we stopped in Golden to meet my mom sip coffee and eat breakfast, while the air warmed up outside.  I’ve ridden so many times in the cold because I’ve needed to, that there is no way I’m going to when we are joy riding!

We ended our great ride in Woodland Park, a town near Colorado Springs, with The grand Pike Peak  towering over it.  Its quite spectacular coming into this town and seeing this!  And…..we stopped at a restaurant and had delicious French Onion Soup, with a toasted cheesy top with fresh homemade bread.  Yum!  We both agreed, that another trip for a bowl of this delicious soup was in store…Jeff, ya in?

Oh Darn! We have to drive down that beautiful road on our motorcycles again :-).  Life is rough, I tell ya!

Poudre Canyon

The road leaving the Shambhala Mountain Center, followed the Poudre river.  It was so inviting, that we stopped for an hour to read in the sun as the sound of the river trickled nearby.

It was so pretty, we thought we would capture the moment by a self-timed photo……not quite enough time!

Eli captured an unexpected shot of me, just after I splashed the cold,fresh snow melt water on my face!

 

And here is the song Eli and I listened to over and over again! Listen closely to the words…..So encouraging to what its all about.
